Ingredients

  • 115 grams unsalted butter
  • 180 grams semi-sweet chocolate chips
  • 200 grams granulated sugar
  • 100 grams light brown sugar, packed
  • 3 pieces large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed espresso (cooled)
  • 95 grams all-purpose flour
  • 30 grams unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving a slight overhang for easy removal later.

Step 2

In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the semi-sweet chocolate chips until smooth and completely melted. Let this mixture cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar and light brown sugar. Add the eggs, one at a time, whisking until fully incorporated. Stir in the vanilla extract and brewed espresso.

Step 4

Slowly pour the slightly cooled chocolate and butter mixture into the bowl with the sugars and eggs. Whisk together until smooth and glossy.

Step 5

In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, instant espresso powder, and salt. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.

Step 6

Pour the batter into the prepared baking pan and spread it out evenly. Tap the pan on the counter a few times to release any air bubbles.

Step 7

Bake in the preheated oven for 28-32 minutes, or until an inserted toothpick comes out with a few moist crumbs. Be careful not to overbake as the brownies are meant to be fudgy.

Step 8

Remove the pan from the oven and let the brownies cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the brownies out of the pan.

Step 9

Slice into 12 squares and serve. Enjoy these rich espresso-infused brownies as a dessert or a treat alongside your favorite cup of coffee!
