Ingredients

  • 4 cups fresh spinach leaves
  • 8 ounces cream cheese (softened)
  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 1 cup Monterey Jack cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 2 garlic cloves (minced)
  • 4 ounces diced green chilies (canned, drained)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 tortilla chips or crusty bread (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish.

Step 2

Rinse the spinach leaves thoroughly and pat them dry. Heat a large skillet over medium heat and add the spinach. Cook for 2–3 minutes until wilted, stirring occasionally. Remove from heat and let cool slightly. Squeeze out excess water from the spinach and chop it finely.

Step 3

In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix well until smooth and creamy.

Step 4

Add the chopped spinach, shredded Monterey Jack cheese, grated Parmesan cheese, minced garlic, diced green chilies, salt, and black pepper to the bowl. Stir until all ingredients are well combined.

Step 5

Transfer the spinach mixture to the prepared baking dish, spreading it out into an even layer.

Step 6

Bake in the preheated oven for 20–25 minutes, or until the dip is hot and bubbly with a lightly golden top.

Step 7

Carefully remove the baking dish from the oven and let the dip cool slightly for 5 minutes before serving.

Step 8

Serve the Espinaca Dip warm with tortilla chips or slices of crusty bread on the side. Enjoy!
