Ingredients

  • 24 pieces Escargots (cooked snails)
  • 120 grams Unsalted butter
  • 3 pieces Garlic cloves
  • 1 piece Shallot
  • 2 tablespoons Fresh parsley
  • 60 milliliters Dry white wine
  • 40 grams Breadcrumbs
  • 30 grams Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 teaspoon Olive oil (for drizzling)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Peel and finely mince the garlic and shallot.

Step 3

Finely chop the parsley leaves and set aside.

Step 4

In a small pan, melt the butter over medium heat. Add the minced garlic and shallot, and sauté for 2-3 minutes until fragrant and softened.

Step 5

Pour in the white wine and add the chopped parsley, salt, and pepper. Stir well and remove the mixture from heat.

Step 6

Place the cooked escargots into individual escargot dishes or oven-safe ramekins. If you don’t have escargot dishes, you can use mini muffin tins to hold the snails.

Step 7

Spoon the garlic herb butter mixture evenly over each snail, ensuring they are well-coated.

Step 8

In a small bowl, mix together the breadcrumbs and grated Parmesan cheese. Sprinkle the breadcrumb mixture generously over the snails.

Step 9

Drizzle a small amount of olive oil over the breadcrumbs to encourage browning.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the topping is golden brown and bubbly.

Step 11

Remove from the oven and serve immediately with fresh baguette slices to soak up the butter sauce.
