Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream the butter and powdered sugar together until light and fluffy.
Add 2 eggs, one at a time, into the butter-sugar mixture, mixing well after each addition.
Stir in the almond flour, vanilla extract, and rum (if using) until the almond cream is smooth and well combined. Set aside.
Roll out the puff pastry sheets on a lightly floured surface. Use a plate or round template to cut out two 10-inch (25 cm) circles from the pastry.
