Ingredients

  • 300 g Stale bread (white or artisan)
  • 500 ml Whole milk
  • 100 ml Heavy cream
  • 3 large Eggs
  • 100 g Granulated sugar
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 80 g Raisins
  • 1 tbsp Butter (for greasing)
  • 2 tbsp Demerara sugar (for topping)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a medium-sized baking dish with butter.

Step 2

Cut the stale bread into roughly 2-inch cubes and place them into the greased baking dish. Sprinkle the raisins evenly over the bread.

Step 3

In a medium-sized saucepan, warm the milk and heavy cream over low heat until slightly steaming but not boiling. Remove from heat.

Step 4

In a mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, cinnamon, and nutmeg. Slowly pour in the warmed milk mixture while whisking constantly to prevent curdling.

Step 5

Pour the custard mixture evenly over the bread and raisins, making sure all the bread pieces are soaked. Let the mixture sit for 10 minutes to allow the bread to absorb the liquid.

Step 6

Sprinkle the top with the demerara sugar for a slight crunch after baking.

Step 7

Bake the bread pudding in the preheated oven for 40-45 minutes, or until the top is golden and the custard is set. A knife inserted into the center should come out clean.

Step 8

Remove the pudding from the oven and let it cool slightly before serving. Enjoy it warm with a drizzle of custard, cream, or a scoop of ice cream.
