Ingredients

  • 500 grams stewing beef, cubed
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 1 large carrot, diced
  • 150 grams button mushrooms, sliced
  • 400 milliliters beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 250 grams shortcrust pastry
  • 1 large egg, beaten

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large mixing bowl, toss the cubed beef with the all-purpose flour until evenly coated.

Step 3

Heat the olive oil in a large skillet or heavy-based saucepan over medium-high heat.

Step 4

Add the floured beef to the skillet in batches, searing on all sides until browned. Remove and set aside.

Step 5

In the same skillet, add the chopped onion and cook for about 5 minutes, until soft and translucent.

Step 6

Stir in the diced carrot and sliced mushrooms. Cook for another 5 minutes.

Step 7

Return the beef to the skillet and pour in the beef stock. Add Worcestershire sauce, thyme, salt, and black pepper.

Step 8

Bring the mixture to a gentle simmer, reduce the heat to low, and cook for about 45 minutes, stirring occasionally, until the beef is tender and the gravy is thickened.

Step 9

Grease a pie dish and roll out the shortcrust pastry to fit the base and sides of the dish.

Step 10

Spoon the beef and gravy mixture into the pastry-lined dish.

Step 11

Roll out the remaining pastry to form a lid for the pie, placing it over the filling.

Step 12

Trim and crimp the edges to seal, and cut a small slit in the center of the pastry lid to allow steam to escape.

Step 13

Brush the top of the pie with the beaten egg for a golden finish.

Step 14

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.

Step 15

Remove from the oven and let the pie cool for 5 minutes before serving. Enjoy!
