Ingredients

  • 2 cups Rolled oats
  • 0.5 cups Almond butter
  • 0.5 cups Honey
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 0.25 cups Mini chocolate chips
  • 1 teaspoons Vanilla extract
  • 0.25 cups Dried cranberries (optional)
  • 0.25 teaspoons Sea salt

Directions

Step 1

In a large mixing bowl, combine the rolled oats, chia seeds, flaxseed meal, and sea salt.

Step 2

In a microwave-safe bowl, warm the almond butter and honey for 20-30 seconds to make them easier to mix. Do not overheat.

Step 3

Add the warmed almond butter and honey mixture to the large mixing bowl with the dry ingredients. Mix until thoroughly combined.

Step 4

Stir in the chocolate chips, vanilla extract, and dried cranberries (if using) until evenly distributed.

Step 5

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 6

Transfer the mixture into the prepared dish and press it firmly and evenly into the pan using a spatula or your hands.

Step 7

Refrigerate for at least 1 hour to set. This helps the bars hold their shape.

Step 8

Once set, lift the parchment paper to remove the mixture from the pan. Place it on a cutting board and cut into 12 equal bars.

Step 9

Store the energy bars in an airtight container in the refrigerator for up to 1 week or in the freezer for longer storage.
