Ingredients

  • 3 cups Shredded chicken (cooked)

  • 1 cup Black beans (drained and rinsed)
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 cups Enchilada sauce (red or green)
  • 1 4-ounce can Diced green chilies
  • 0.5 cup Diced onions (optional)
  • 2 tablespoons Chopped fresh cilantro
  • 1 tablespoon Cooking spray or oil
  • 0 optional Sour cream (for serving)
  • 0 optional Sliced avocado (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a thin layer of oil.

Step 2

In a mixing bowl, combine the shredded chicken, rice, black beans, 1 cup of shredded cheddar cheese, diced green chilies, and diced onions (if using). Mix until well combined.
