Ingredients

  • 2 pounds Ground beef (80/20 lean-to-fat ratio)
  • 1 cup Enchilada sauce (divided)
  • 1 cup Crushed tortilla chips
  • 1 cup Shredded Mexican cheese blend
  • 1 piece Large egg
  • 0.5 cup Diced onion
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a standard loaf pan with non-stick spray or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, 1/2 cup of enchilada sauce, crushed tortilla chips, shredded Mexican cheese blend, egg, diced onion, garlic powder, ground cumin, chili powder, salt, and black pepper. Use your hands or a spatula to mix until well incorporated.

Step 3

Transfer the meat mixture into the prepared loaf pan, pressing it firmly and evenly into the pan.

Step 4

Spread the remaining 1/2 cup of enchilada sauce evenly over the top of the meatloaf to create a glaze.

Step 5

Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 6

Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes to allow the juices to redistribute.

Step 7

Carefully transfer the meatloaf to a serving platter or slice it directly in the pan. If desired, garnish with chopped fresh cilantro for added flavor and presentation.

Step 8

Serve warm with your favorite side dishes, such as rice, beans, or a fresh salad. Enjoy!
