Ingredients

  • 1 piece (8-12 oz) steak (ribeye, sirloin, or strip)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1 tablespoon unsalted butter
  • 1 sprig fresh rosemary or thyme sprigs

Directions

Step 1

Remove the steak from the refrigerator and let it sit at room temperature for 10-15 minutes to ensure even cooking.

Step 2

Pat the steak dry with paper towels to remove excess moisture, which helps achieve a good sear.

Step 3

Generously season both sides of the steak with kosher salt and freshly ground black pepper.

Step 4

Heat a heavy-bottomed skillet or cast-iron pan over high heat until very hot, about 2-3 minutes.

Step 5

Add olive oil to the skillet and swirl to coat the bottom.

Step 6

Carefully place the steak into the hot skillet. Let it sear undisturbed for 2-3 minutes to develop a golden-brown crust.

Step 7

Flip the steak and sear the other side for another 2-3 minutes. Avoid moving the steak too much to maintain the crust.

Step 8

Reduce the heat to medium-low. Add the unsalted butter, crushed garlic, and rosemary or thyme sprig to the skillet.

Step 9

Tilt the skillet slightly and use a spoon to continuously baste the steak with the melted butter mixture for 1-2 minutes.

Step 10

Check for desired doneness using a meat thermometer: 125°F for rare, 135°F for medium-rare, or 145°F for medium.

Step 11

Remove the steak from the skillet and let it rest on a cutting board for 5 minutes. This allows the juices to redistribute and keeps the steak moist.

Step 12

Slice against the grain and serve immediately. Drizzle with any remaining butter from the skillet for extra flavor if desired.
