Ingredients

  • 12 pieces Rice paper wrappers
  • 2 medium, julienned Carrot
  • 1 medium, julienned Cucumber
  • 1 medium, julienned Red bell pepper
  • 1 cup, finely shredded Purple cabbage
  • 1 cup Fresh cilantro leaves
  • 1 cup Fresh mint leaves
  • 1 cup Cooked vermicelli rice noodles
  • 0.25 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Honey
  • 1 teaspoon, grated Fresh ginger
  • 1 teaspoon Sesame oil
  • 1 cup, warm Water

Directions

Step 1

Prepare all the vegetables: julienne the carrot, cucumber, and red bell pepper, and shred the purple cabbage.

Step 2

Cook the vermicelli rice noodles according to package instructions. Once cooked, drain and set aside to cool.

Step 3

Set up a large, shallow dish or bowl filled with warm water for softening the rice paper wrappers.

Step 4

In a small bowl, make the dipping sauce by combining soy sauce, rice vinegar, honey, grated ginger, and sesame oil. Mix well and set aside.
