Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 4 ounces cream cheese, softened
  • 0.25 cup sour cream
  • 4 slices cooked and crumbled bacon
  • 0.5 cup shredded sharp cheddar cheese
  • 2 green onions, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 0.25 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

Wash and scrub the sweet potatoes thoroughly, then pat them dry. Pierce each sweet potato several times with a fork to allow steam to escape during baking.

Step 3

Rub the sweet potatoes with 1 tablespoon of olive oil, ensuring they are evenly coated. Place them on the prepared baking sheet and bake for 40-45 minutes, or until they are tender and a knife easily pierces through the flesh.

Step 4

Remove the sweet potatoes from the oven and allow them to cool for 10 minutes, or until they are safe to handle.

Step 5

Slice each sweet potato in half lengthwise. Carefully scoop out most of the flesh, leaving a thin layer inside to maintain structure. Set aside the scooped-out flesh in a mixing bowl.

Step 6

Brush the inside and outside of the sweet potato skins with the remaining 1 tablespoon of olive oil. Sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of pepper. Place the skins back onto the baking sheet, cut side up, and bake for an additional 10 minutes to crisp them slightly.

Step 7

While the skins are crisping, mash the reserved sweet potato flesh until smooth. Add the cream cheese, sour cream, crumbled bacon, 0.25 cup of the shredded cheddar, green onions, the remaining salt, and pepper. Mix until well combined.

Step 8

Remove the crisped sweet potato skins from the oven and spoon the filling evenly into each skin. Top with the remaining shredded cheddar cheese.

Step 9

Return the filled sweet potato skins to the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

Step 10

Garnish with fresh parsley and a sprinkle of paprika if desired. Serve warm and enjoy your elegant sweet potato skins!
