Ingredients

  • 500 grams Broccoli florets
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 2 Garlic cloves
  • 750 milliliters Vegetable stock
  • 120 milliliters Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Olive oil
  • 0 Crusty bread, for serving (optional)

Directions

Step 1

Wash the broccoli florets thoroughly under cold water and set aside to drain.

Step 2

Peel and finely chop the yellow onion. Mince the garlic cloves.

Step 3

In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.

Step 4

Add the minced garlic and fresh thyme leaves to the pot. Stir and cook for an additional minute, until fragrant.

Step 5

Add the broccoli florets and vegetable stock to the pot. Bring the mixture to a boil, then reduce the heat to low. Simmer for 15 minutes, or until the broccoli is very tender.

Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender to puree, then return it to the pot.
