Ingredients

  • 2 cups Roasted red bell peppers
  • 8 ounces Cream cheese
  • 0.5 cup Sour cream
  • 0.25 cup Mayonnaise
  • 2 cloves Garlic
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro
  • 1 teaspoon Olive oil

Directions

Step 1

If using fresh red bell peppers, roast them: Preheat the oven to 450°F (232°C). Place whole red bell peppers on a baking sheet and lightly coat with 1 teaspoon of olive oil. Roast for 20-25 minutes, turning them every 5-7 minutes, until the skin is charred and blistered. Place the peppers in a bowl and cover with plastic wrap for 10 minutes to steam, then peel off the skins, remove seeds, and chop into smaller pieces.

Step 2

If using store-bought roasted red peppers, measure out 2 cups and drain them of excess liquid before use.

Step 3

In a food processor, combine the roasted red peppers, cream cheese, sour cream, and mayonnaise. Blend until smooth and creamy.

Step 4

Add garlic cloves, lemon juice, ground cumin, paprika, salt, black pepper, and cilantro to the food processor. Blend again until all ingredients are fully incorporated and the mixture is smooth.

Step 5

Taste the dip and adjust the seasoning if needed by adding more salt, pepper, or lemon juice to your preference.

Step 6

Transfer the red pepper dip to a serving bowl and cover. Refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 7

Serve chilled with tortilla chips, fresh vegetable sticks, or use it as a spread for sandwiches or wraps. Enjoy!
