Ingredients

  • 500 g beef steak (sirloin or ribeye)
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 piece red bell pepper
  • 1 piece yellow onion
  • 1 piece zucchini
  • 2 pieces chipotle peppers in adobo sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp low-sodium soy sauce
  • 2 tbsp fresh cilantro (chopped)

Directions

Step 1

1. In a small bowl, mix together smoked paprika, ground cumin, garlic powder, salt, and black pepper. Rub this spice mixture onto both sides of the beef steaks.

Step 2

2. Drizzle 1 tablespoon of olive oil over the beef steaks and massage it in. Set aside to marinate while you prepare the vegetables.

Step 3

3. Slice the red bell pepper, yellow onion, and zucchini into thick strips. Toss the vegetables with the remaining tablespoon of olive oil, a pinch of salt, and black pepper.

Step 4

4. Preheat a grill pan or outdoor grill over medium-high heat. Once hot, place the vegetables on the grill. Cook for 4-5 minutes per side until charred and tender. Remove and set aside.

Step 5

5. Grill the beef steaks for 3-5 minutes per side for medium-rare, or longer for desired doneness. Remove from the grill and let rest for 5 minutes before slicing thinly against the grain.

Step 6

6. While the beef is resting, prepare the smoky sauce. In a blender, combine chipotle peppers, adobo sauce, honey, lime juice, and soy sauce. Blend until smooth.

Step 7

7. To assemble 'El Ritual,' layer the charred vegetables on a serving platter. Arrange the sliced beef over the vegetables. Drizzle the smoky chipotle sauce over the top.

Step 8

8. Garnish with fresh chopped cilantro and serve immediately. Enjoy this bold and flavorful dish with a sense of ceremony!
