Ingredients

  • 12 oz penne pasta
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 14.5 oz canned diced tomatoes
  • 15 oz canned black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with nonstick spray or olive oil and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 3 minutes.
