Ingredients

  • 2 tablespoons olive oil
  • 1 large onion
  • 3 pieces garlic cloves
  • 3 medium carrots
  • 4 medium potatoes
  • 1 large leeks
  • 2 pieces celery stalks
  • 14 ounces smoked sausage (e.g., kielbasa or bratwurst)
  • 1 cup green beans
  • 15 ounces canned white beans (drained and rinsed)
  • 6 cups beef or vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Step 2

Peel and dice the onion and garlic. Add them to the pot and sauté until softened and translucent, about 5 minutes.

Step 3

Peel and slice the carrots and potatoes into bite-sized pieces. Slice the leek into rounds and chop the celery. Add the vegetables to the pot and stir.

Step 4

Cut the smoked sausage into thick slices and add it to the pot. Cook for another 5 minutes, letting the sausage release its flavors.

Step 5

Pour in the broth and bring to a gentle boil. Add the bay leaf, dried thyme, salt, and black pepper.

Step 6

Reduce the heat to low, cover, and let the mixture simmer for 30 minutes.

Step 7

Add the green beans and canned white beans to the pot. Stir well and simmer for another 15 minutes, or until all the vegetables are tender.

Step 8

Remove the bay leaf and adjust the seasoning with more salt or pepper if needed.

Step 9

Garnish with freshly chopped parsley before serving. Serve hot with crusty bread for a complete meal.
