Eight Treasures Rice is a stunning, traditional Chinese dessert that is as visually captivating as it is delicious. Featuring a base of steamed glutinous rice, this festive treat is adorned with an array of "treasures"—dried red dates, candied cherries, black raisins, walnuts, pumpkin seeds, and more—arranged in intricate patterns that make every serving a feast for the eyes. Sweetened with honey and layered with velvety red bean paste, this dessert achieves the perfect balance of sweetness and texture. Often served during celebrations or special occasions, Eight Treasures Rice is a symbol of harmony and prosperity. Delight in its rich flavors and vibrant presentation, ideal for sharing with family and friends. Whether you’re crafting it for Lunar New Year or a festive dinner, this dish is a showstopper guaranteed to impress!
Rinse the glutinous rice thoroughly until the water runs clear. Soak the rice in water for at least 4-6 hours or overnight.
Drain the soaked rice and place it in a steamer lined with a damp cheesecloth. Steam on high heat for 30 minutes, then remove the rice and set aside.
While the rice is steaming, prepare your toppings: pit the dried red dates, chop dried apricots into small pieces, and organize the candied cherries, black raisins, pumpkin seeds, and walnuts for decoration.
In a large bowl, mix the steamed glutinous rice with rock sugar (if using), vegetable oil, and honey. Stir well until the sugar has dissolved and the rice is evenly coated.
Lightly grease a heatproof bowl with a thin layer of vegetable oil. Begin arranging the “treasures” decoratively in the bottom of the bowl. Place the red dates, candied cherries, raisins, walnuts, pumpkin seeds, and apricots in a circular pattern or any design you like.
Spread a thin layer of red bean paste over the decorations to create a base. Gently spoon half of the sweetened rice over the red bean paste, pressing it down with a spatula to form a solid layer.
Add the remaining red bean paste as a second layer, carefully spreading it over the rice. Finish with the rest of the rice, pressing down firmly to compact the dessert.
Cover the bowl with foil or a lid and steam on medium heat for 30 minutes.
Once finished, remove from the steamer and let it cool for 5-10 minutes. Carefully invert the bowl onto a serving plate, tapping gently to release the rice.
Drizzle additional honey or syrup over the top if desired, and serve warm as a delightful dessert.
