Ingredients

  • 6 pieces large eggs
  • 120 grams mayonnaise
  • 60 grams plain yogurt
  • 15 grams yellow mustard
  • 30 grams pickle relish
  • 2 tablespoons chives, finely chopped
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Place the large eggs in a medium saucepan and cover them with water. Bring the water to a boil over medium-high heat.

Step 2

Once the water is boiling, cover the saucepan, remove it from heat, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, drain the hot water and transfer the eggs to a bowl of ice water. Allow them to cool for at least 5 minutes.

Step 4

Peel the cooled eggs and chop them into bite-sized pieces.

Step 5

In a large mixing bowl, combine mayonnaise, plain yogurt, yellow mustard, pickle relish, chives, lemon juice, salt, and black pepper. Stir until the ingredients are well combined.

Step 6

Add the chopped eggs to the mayonnaise mixture. Gently fold the eggs into the dressing to evenly coat them.

Step 7

Cover the bowl and refrigerate the eiersalat for at least 30 minutes to let the flavors meld.

Step 8

Serve the eiersalat chilled, garnished with additional chives if desired. It's perfect as a spread on bread or as a side dish.
