Ingredients

  • 500 grams carrots
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 60 milliliters water
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the carrots and cut them into evenly-sized chunks.

Step 2

Bring a large pot of water to a boil and add a pinch of salt. Add the carrots and cook for 20 minutes, or until they are very tender when pierced with a fork.

Step 3

While the carrots are cooking, peel the garlic cloves and roughly chop them.

Step 4

In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped garlic and sauté for 1-2 minutes until fragrant, but not browned. Remove from heat.

Drain the cooked carrots and transfer them to a blender or food processor.

Add the sautéed garlic, remaining olive oil, tahini, lemon juice, cumin, coriander, paprika, cinnamon, salt, black pepper, and 60 milliliters of water to the blender with the carrots.

Blend the mixture until smooth, scraping down the sides as needed. If the puree is too thick, add more water, 1 tablespoon at a time, until the desired consistency is achieved.

Taste the puree and adjust seasoning with more salt or lemon juice if necessary.

Transfer the carrot puree to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of fresh parsley on top.
