Ingredients

  • 0.5 cup Short-grain white rice
  • 1 cup Water
  • 4 cups Whole milk
  • 0.5 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Rose water (optional)
  • 0.25 teaspoon Ground cinnamon (optional, for garnish)
  • 2 tablespoons Chopped nuts (optional, for garnish)

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

Place the rice and 1 cup of water in a medium saucepan and bring to a boil over medium heat. Once boiling, reduce the heat to low and cover the pan. Simmer for about 10 minutes, or until the water is absorbed, and the rice is partially cooked.

Step 3

In a small bowl, mix the cornstarch with 1/4 cup of milk to create a smooth slurry. Set aside.

Step 4

Add the rest of the milk (3 3/4 cups) to the saucepan with the partially cooked rice. Stir well and bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking.

Step 5

Once the mixture begins to boil, lower the heat to a gentle simmer and stir in the sugar. Cook for 10–15 minutes, stirring frequently, until the rice is fully cooked and the mixture begins to thicken.

Step 6

Stir in the cornstarch slurry and continue to cook while stirring constantly for another 3–5 minutes, or until the pudding reaches your desired consistency. Keep in mind that it will thicken further as it cools.

Step 7

Remove the saucepan from the heat and stir in the vanilla extract and rose water, if using.

Step 8

Pour the rice pudding into individual serving bowls or one large serving dish. Allow it to cool slightly, then cover and refrigerate if serving chilled.

Step 9

Before serving, garnish with ground cinnamon and chopped nuts, if desired. Serve warm or chilled.
