Ingredients

  • 3 cups All-purpose flour
  • 1 cup Warm water
  • 1 tablespoon Honey
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Salt
  • 3 tablespoons Olive oil
  • 1 medium (finely chopped) Yellow onion
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground coriander
  • 0.25 teaspoon Salt (for seasoning onions)

Directions

Step 1

In a small bowl, combine the warm water, honey, and active dry yeast. Stir to dissolve and let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and 2 tablespoons of olive oil. Mix until a soft dough forms.

Step 3

Turn the dough out onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and allow it to rise in a warm place for 1 hour or until doubled in size.

Step 4

While the dough is rising, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped onion, ground cumin, ground coriander, and 1/4 teaspoon of salt. Cook for 8-10 minutes, stirring frequently, until the onions are soft and caramelized. Remove from heat and set aside to cool.

Step 5

Once the dough has risen, punch it down and divide it into 6 equal portions. Roll each portion into a ball and cover them with a damp cloth to prevent drying.

Step 6

Preheat a large skillet or a cast-iron pan over medium-high heat.

Step 7

One at a time, roll out each dough ball on a floured surface into a circle about 6-8 inches in diameter. Sprinkle a small amount of the cooled caramelized onions onto one half of the circle, then fold the other half over and press lightly to seal the edges.

Step 8

Place the stuffed pita onto the preheated skillet. Cook for 2-3 minutes on each side, or until puffed and golden brown. Repeat with the remaining dough.

Step 9

Serve warm with your favorite dip or alongside a main dish. Enjoy!
