Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 cloves garlic cloves
  • 3 medium ripe tomatoes
  • 1 teaspoon smoked paprika
  • 6 units large eggs
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons flat-leaf parsley

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Finely chop the onion, and sauté it in the skillet until softened and translucent, about 5 minutes.

Step 3

Slice the red and green bell peppers into thin strips. Add them to the skillet and cook for about 8 minutes, stirring occasionally, until they are tender.

Step 4

Mince the garlic cloves and dice the tomatoes. Add both to the skillet along with the smoked paprika. Cook for another 5 minutes, allowing the tomatoes to break down slightly.

Step 5

In a medium bowl, crack the eggs and beat them lightly with a whisk. Season with the salt and black pepper.

Step 6

Lower the heat to medium-low. Pour the beaten eggs into the skillet with the vegetables. Gently stir the mixture with a spatula, cooking the eggs slowly until they are softly scrambled and just set.

Step 7

Remove the skillet from the heat. Chop the parsley and sprinkle it over the dish before serving.

Step 8

Serve warm with crusty bread or a side of salad for a complete meal.
