Ingredients

  • 4 Large eggs
  • 2 tbsp Milk
  • 2 tbsp Butter
  • 4 slices Canadian bacon
  • 1 cup Fresh spinach leaves
  • 0.5 cup Hollandaise sauce
  • 2 Large flour tortillas
  • 0.25 tsp Salt
  • 0.25 tsp Ground black pepper
  • 1 tbsp Chopped chives (optional garnish)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 2

Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat. Add the egg mixture and stir gently with a spatula to scramble. Cook until the eggs are just set but still soft. Remove from heat and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of butter over medium heat. Add the Canadian bacon slices and cook for 1-2 minutes per side until lightly browned and heated through. Remove from heat.
