Ingredients

  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 3 cups, halved Cherry tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 large Eggs
  • 2 tablespoons, chopped Fresh parsley
  • 4 slices (for serving) Crusty bread

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium ovenproof skillet, heat the olive oil over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes until soft and translucent.

Step 4

Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 5

Stir in the halved cherry tomatoes and cook for 5 minutes until softened and juicy.

Step 6

Add the tomato paste, paprika, cumin, salt, and black pepper. Mix well to combine and simmer for 2-3 minutes to allow the flavors to meld.

Step 7

Use the back of a spoon to create four small wells in the tomato mixture and carefully crack an egg into each well.

Step 8

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the egg whites are set but the yolks remain slightly runny.

Step 9

Remove from the oven and garnish with freshly chopped parsley.

Step 10

Serve hot with slices of crusty bread to mop up the flavorful tomato sauce.
