Ingredients

  • 1 large eggplant
  • 1 cup breadcrumbs
  • 0.5 cup Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons water

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Peel and dice the eggplant into small cubes. Place the cubes in a microwave-safe bowl with 2 tablespoons of water, cover with a plate, and microwave for 6-8 minutes, until soft.

Step 3

Once the eggplant is tender, drain any excess water and mash it with a fork or potato masher until smooth. Allow it to cool slightly.

Step 4

Finely chop the parsley and mince the garlic cloves.

Step 5

In a mixing bowl, combine the mashed eggplant, breadcrumbs, Parmesan cheese, egg, parsley, garlic, salt, and black pepper. Mix until all the ingredients are well incorporated and form a cohesive mixture.

Step 6

Using your hands, shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.

Step 7

Heat a non-stick skillet over medium heat and add the olive oil. Once hot, fry the patties in batches for about 2-3 minutes per side, or until golden brown.

Step 8

If preferred, place the fried patties on the prepared baking sheet and bake in the oven for an additional 5-7 minutes to ensure they are fully cooked through.

Step 9

Serve warm alongside a dipping sauce, salad, or as part of a sandwich.
