Ingredients

  • 1 medium eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • 4 pieces ciabatta rolls
  • 8 slices mozzarella cheese
  • 1 large tomato
  • 12 pieces basil leaves
  • 2 tablespoons balsamic glaze
  • 4 teaspoons butter

Directions

Step 1

Slice the eggplant into 1/4-inch thick rounds and place them in a single layer on a plate or cutting board.

Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

Heat a grill pan or skillet over medium heat. Grill the eggplant slices for 3-4 minutes on each side until tender and slightly charred. Remove from heat and set aside.

Slice the ciabatta rolls in half lengthwise. Spread a small amount of butter on the cut side of each roll to ensure a golden, toasty finish when grilled.
