Ingredients

  • 2 medium-sized Eggplants
  • 2 tablespoons Olive oil
  • 2 large Garlic cloves

Directions

Step 1

Preheat your oven to 425°F (220°C).

Wash and pat dry the eggplants. Pierce them several times with a fork to allow steam to escape during cooking.
