Ingredients

  • 2 medium Eggplant (Aubergine)
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Water
  • 1.5 cups Breadcrumbs (preferably panko)
  • 0.5 cup Parmesan cheese (grated)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0 Olive oil spray (or cooking spray)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Wash the eggplants and cut them into sticks approximately 3 inches long and 1/2 inch thick.
