Ingredients

  • 6 large Egg yolks

Directions

Step 1

In a medium mixing bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thickened. Set aside.

Step 2

In a medium saucepan over medium heat, combine the whole milk, heavy cream, cinnamon stick, nutmeg, and salt. Heat the mixture until it’s steaming but not boiling, stirring occasionally to prevent scorching.

Step 3

Slowly temper the hot milk mixture into the egg yolk and sugar mixture by adding a ladleful at a time while constantly whisking. This prevents the eggs from scrambling.

Step 4

Once fully combined, pour the mixture back into the saucepan and heat gently over medium-low heat, stirring constantly. Cook until the mixture thickens slightly and coats the back of a spoon, about 5–7 minutes. Do not let it boil.
