Ingredients

  • 1 cup unsalted butter
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon rum extract
  • 1 egg yolk
  • 2.25 cups all-purpose flour
  • 0.5 teaspoon ground nutmeg
  • 1 cup powdered sugar
  • 2 tablespoons eggnog
  • 0.25 teaspoon ground nutmeg (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy, using a hand or stand mixer.

Step 3

Add the vanilla extract, rum extract, and egg yolk to the butter-sugar mixture. Beat until smooth and fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour and ground nutmeg. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.

Step 5

Divide the dough into four equal portions. Roll each portion into a long rope about 1/2 inch in diameter. Cut each rope into 2-inch lengths and gently transfer the pieces to the prepared baking sheets, leaving a small gap between each cookie.

Step 6

Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 7

While the cookies are cooling, prepare the glaze by whisking together the powdered sugar and eggnog in a small bowl until smooth.

Step 8

Dip the top of each cooled cookie into the glaze, allowing any excess to drip off. Place the cookies back on the wire rack and immediately sprinkle a pinch of ground nutmeg on top of each glazed cookie for garnish.

Step 9

Allow the glaze to set for about 30 minutes before serving or storing in an airtight container.
