Directions

Step 1

In a medium mixing bowl or the bowl of a stand mixer, whisk together the eggs and granulated sugar until the mixture becomes pale and fluffy, about 2–3 minutes.

Transfer the egg-sugar mixture to a medium saucepan set over low heat. Gradually whisk in the whole milk, stirring constantly to avoid scrambling the eggs.

Cook the mixture over low heat, stirring constantly, until it thickens slightly and reaches 160°F on a kitchen thermometer. Remove from heat.
