Ingredients

  • 4 large Eggs
  • 2 teaspoons Sugar
  • 1 teaspoon Soy sauce
  • 2 tablespoons Dashi (optional)
  • 1 teaspoon Vegetable oil

Directions

Step 1

In a medium-sized mixing bowl, crack the eggs and beat them lightly with a whisk or chopsticks until combined.

Add sugar, soy sauce, and dashi (if using) to the eggs. Mix well until the sugar dissolves and the mixture is uniform.

Heat a square or rectangular tamagoyaki pan (or a non-stick frying pan) over medium-low heat and lightly coat it with vegetable oil using a paper towel.

Pour a thin layer of the egg mixture into the pan, just enough to coat the bottom. Swirl the pan to spread the egg evenly.
