Ingredients

  • 2 cups Dosa batter
  • 4 Eggs
  • 1 small, finely chopped Onion
  • 1 small, finely chopped Green chili
  • 2 tablespoons, chopped Fresh coriander leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter or Oil

Directions

Step 1

1. In a medium bowl, crack the eggs and beat them lightly. Add the chopped onion, green chili, coriander leaves, salt, and black pepper. Mix well and set aside.

2. Heat a non-stick pan or cast-iron skillet over medium heat. Add a few drops of oil and spread it evenly using a paper towel.

3. Pour a ladleful of dosa batter onto the pan and spread it into a thin, even circle using the back of the ladle. The ideal dosa is thin and even on all sides.

4. Increase the heat slightly and cook the dosa until the sides begin to lift from the pan and the surface is mostly cooked.

5. Pour approximately 1/4th of the egg mixture evenly over the dosa. Spread it gently with a spatula to cover the entire surface.

6. Drizzle some oil or butter around the edges and on top of the dosa. Cook for 2-3 minutes, until the egg is set and cooked.

7. Use a spatula to carefully release the sides of the dosa and fold it in half. Let it cook for another minute to ensure both sides are crispy.

8. Remove the egg dosa from the pan and repeat the process with the remaining batter and egg mixture.
