Ingredients

  • 250 grams dried noodles (e.g., egg noodles or spaghetti)
  • 3 large eggs
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 cloves garlic
  • 3 stalks green onions
  • 2 tablespoons vegetable oil
  • 0.5 teaspoons red chili flakes (optional)
  • 1 pinch salt
  • 1 pinch black pepper

Directions

Step 1

Bring a large pot of water to a boil. Add the dried noodles and cook according to package instructions until al dente. Drain the noodles and set them aside.

Step 2

While the noodles are cooking, finely mince the garlic and slice the green onions. Separate the green parts of the onions from the white parts, as both will be used at different stages.

Step 3

In a small bowl, crack the eggs and lightly beat them with a fork. Add a pinch of salt and black pepper for seasoning.

Step 4

In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and the white parts of the green onions. Sauté for 1-2 minutes until fragrant.

Step 5

Push the garlic and onions to one side of the skillet. Pour the beaten eggs into the other side. Let them cook undisturbed for 30 seconds, then scramble them gently until just set.

Step 6

Add the cooked and drained noodles to the skillet. Toss everything together with tongs or a spatula.

Step 7

Drizzle the soy sauce and sesame oil evenly over the noodles. Sprinkle in the red chili flakes if you'd like a bit of heat. Toss everything well to combine.

Step 8

Cook for another 2-3 minutes, stirring frequently, until the noodles are fully coated in the sauce and heated through.

Step 9

Remove the skillet from heat. Garnish with the green parts of the green onions and serve immediately.
