Ingredients

  • 6 large Eggs
  • 4 medium Ripe tomatoes
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese
  • 0.5 cup Breadcrumbs
  • 8 leaves Fresh basil leaves
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter and set aside.

Step 2

Slice the tomatoes into 1/4-inch rounds and arrange them in the prepared baking dish, slightly overlapping. Tear the basil leaves into smaller pieces and sprinkle them over the tomato slices.

Step 3

In a small skillet, heat the olive oil over medium heat. Mince the garlic and sauté it in the olive oil for 1-2 minutes until fragrant. Drizzle the garlic-infused oil evenly over the tomatoes.

Step 4

Crack the eggs into a mixing bowl and whisk them until combined. Add the heavy cream, salt, and black pepper, and whisk again until smooth.

Step 5

Pour the egg mixture evenly over the tomatoes in the baking dish, ensuring the mixture spreads to the edges.

Step 6

In a separate bowl, mix the Parmesan cheese and breadcrumbs. Sprinkle this mixture evenly over the top of the eggs and tomatoes.

Step 7

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden and bubbly.

Step 8

Remove the gratin from the oven and let it cool for 5 minutes before serving. Garnish with additional fresh basil if desired.
