Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Milk
  • 2 cups Kale (stems removed, chopped)
  • 1 tablespoon Olive oil
  • 1 clove Garlic (minced)

  • 0.25 teaspoon Black pepper
  • 0.5 cup Shredded cheese (cheddar or mozzarella)
  • 4 pieces Whole wheat tortillas
  • 2 teaspoons Hot sauce (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Step 2

Heat the olive oil in a large nonstick skillet over medium heat. Once hot, add the minced garlic and sauté for 30 seconds until fragrant.

Add the chopped kale to the skillet and sauté for 2-3 minutes until it begins to wilt. Remove the kale from the pan and set it aside.
