Ingredients

  • 3 pieces Flour tortillas
  • 4 large Eggs
  • 2 tablespoons Milk
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter
  • 4 tablespoons Cream cheese
  • 1 cup Fresh spinach leaves
  • 6 slices Deli ham slices

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.

Step 2

Heat a non-stick skillet over medium heat and add the butter. Once melted, pour in the egg mixture and cook, stirring gently, until scrambled and just set. Remove from heat and let cool slightly.

Step 3

Lay out the flour tortillas on a clean surface. Spread 1 tablespoon of cream cheese evenly over each tortilla.

Step 4

Place a layer of fresh spinach leaves over the cream cheese, covering the surface evenly.

Step 5

Lay 2 slices of deli ham on top of the spinach on each tortilla.

Step 6

Distribute the scrambled eggs evenly across the tortillas, spreading them out in a thin layer.

Step 7

Starting at one end, tightly roll each tortilla into a log shape. Wrap each roll in plastic wrap and refrigerate for 15 minutes to set.

Step 8

Remove the plastic wrap and use a sharp knife to slice each roll into 1-inch pinwheels.

Step 9

Arrange the pinwheels on a serving plate and enjoy!
