Ingredients

  • 1 loaf Baguette
  • 2 tablespoons Olive oil
  • 4 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Unsalted butter
  • 1 medium Apple
  • 1 teaspoon Lemon juice
  • 0.25 teaspoons Ground cinnamon
  • 1 teaspoon Honey
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 12 even slices, about 1/2-inch thick. Arrange the slices on a baking sheet and brush both sides lightly with 1 tablespoon of olive oil.

Step 3

Toast the baguette slices in the oven for 8-10 minutes, flipping halfway through, until golden and crisp. Set aside.

Step 4

Core the apple and cut it into small dice. Toss the diced apple with lemon juice, ground cinnamon, and honey in a small bowl. Set aside.

Step 5

Crack the eggs into a bowl and whisk together with milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Step 6

In a non-stick skillet, heat 1 tablespoon of butter over medium-low heat. Add the whisked eggs and cook gently, stirring constantly with a spatula, until the eggs just start to set and become creamy. Remove from heat to avoid overcooking.

Step 7

To assemble, top each baguette slice with a spoonful of scrambled eggs. Add a small portion of the apple mixture on top of the eggs.

Step 8

Drizzle each bruschetta with a little olive oil and garnish with freshly chopped parsley.

Step 9

Serve immediately and enjoy!
