  • 500 grams fresh spinach or kale
  • 3 large red bell pepper
  • 2 medium scotch bonnet pepper

  • 1 large onion
  • 120 ml palm oil
  • 150 grams smoked fish
  • 400 grams, cooked and cubed beef
  • 150 grams, cooked and cubed cow tripe (shaki)
  • 1 tablespoon ground crayfish
  • 1 stock cube
  • 1 teaspoon salt
  • 250 ml water

Directions

Step 1

Start by washing the spinach or kale thoroughly in cold water to remove any dirt. Chop into small pieces and set aside.

Step 2

Blend the red bell peppers, scotch bonnet peppers, tomatoes, and half of the onion in a blender to create a smooth puree.

Step 3

Slice the remaining half of the onion thinly.

Step 4

Heat the palm oil in a large pot over medium heat. Add the sliced onions and sauté until translucent.

Pour the blended pepper mixture into the pot and cook for approximately 10 minutes, stirring occasionally, until the mixture reduces and thickens.

Add the smoked fish, cooked beef, and cow tripe to the pot. Stir to combine and let simmer for 5 minutes.

Add the ground crayfish, stock cube, and salt, stirring well to incorporate the flavors.
