  • 50 grams Granulated sugar
  • 200 milliliters Heavy cream
  • 150 milliliters Orange juice (freshly squeezed)
  • 1 teaspoon Orange zest
  • 5 grams Powdered gelatin
  • 50 milliliters Water
  • 2 tablespoons Honey
  • 20 grams Dark chocolate shavings (optional, for garnish)
  • 3 pieces Candy orange slices (optional, for garnish)

Directions

Step 1

1. Melt the dark chocolate and unsalted butter together in a heatproof bowl set over a pot of simmering water. Stir until smooth, then remove from heat and let cool slightly.

2. In a separate bowl, whip the heavy cream until soft peaks form. Refrigerate until needed.
