Ingredients

  • 4 cups Fresh watermelon (seedless or seeds removed)
  • 1 cup Granulated sugar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Powdered unflavored gelatin
  • 0.25 cup Water

Directions

Step 1

Cut the watermelon into chunks and remove any seeds if necessary.

Blend the watermelon chunks in a blender until smooth, then strain the juice through a fine-mesh sieve into a bowl to remove pulp. You should have approximately 4 cups of watermelon juice.

In a medium saucepan, combine the watermelon juice, granulated sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Do not boil.

In a small bowl, combine the powdered gelatin with 1/4 cup of water. Let it sit for 5 minutes to bloom.

Add the bloomed gelatin to the warm watermelon mixture in the saucepan. Stir continuously until the gelatin is fully dissolved.
