Ingredients

  • 500 grams ripe tomatoes
  • 1 medium-sized onion
  • 2 pieces garlic cloves
  • 1 teaspoon fresh ginger
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon red chili flakes
  • 2 tablespoons sugar
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Wash the tomatoes thoroughly and roughly chop them into small pieces.

Step 2

Peel and finely chop the onion and garlic cloves. Grate the fresh ginger.

Step 3

Heat olive oil in a medium-sized saucepan over medium heat.

Step 4

Add the chopped onion to the pan and sauté for about 3-4 minutes until softened and translucent.

Stir in the garlic and ginger and cook for an additional minute until fragrant.

Add the ground cumin, ground coriander, and red chili flakes to the pan, cooking for 30 seconds to release their aroma.
