  • 28 ounces canned whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 cup (loosely packed) fresh basil leaves
  • 0.5 cup heavy cream
  • 1 teaspoon (to taste) salt
  • 0.25 teaspoon (to taste) black pepper
  • 1 teaspoon sugar
  • 0 (optional, for serving) crusty bread or croutons

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, stirring frequently, until fragrant.

Pour in the canned tomatoes, including their juice, and use a wooden spoon to break them into smaller pieces.

Step 11

Serve hot with optional crusty bread or croutons on the side.
