Ingredients

  • 4 pieces Turkey cutlets
  • 2 cups Baby spinach
  • 2 cloves Garlic, minced
  • 4 tablespoons Cream cheese, softened
  • 2 tablespoons Grated Parmesan cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Bread crumbs (optional)
  • 1 cup Chicken broth
  • 0.5 teaspoon Paprika
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the cooked spinach, cream cheese, Parmesan cheese, and half of the salt and black pepper. Mix thoroughly to create the stuffing.

Step 5

Place each turkey cutlet on a flat surface and pound gently with a meat mallet to an even thickness of about 1/4 inch.

Step 6

Spoon a portion of the spinach mixture onto one end of each cutlet. Roll each cutlet tightly around the stuffing and secure with 1-2 toothpicks.

Step 7

Season the outside of the turkey rolls with the remaining salt, black pepper, and paprika. If desired, lightly coat the rolls with bread crumbs for added texture.

Step 8

In an oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the turkey rolls for 2-3 minutes on each side until golden brown.

Step 9

Pour the chicken broth into the skillet to create a light sauce. Transfer the skillet to the preheated oven.

Step 10

Bake for 15-20 minutes, or until the turkey is cooked through and reaches an internal temperature of 165°F (74°C).

Step 11

Remove the skillet from the oven and let the rolls rest for 5 minutes before removing the toothpicks.

Step 12

Serve the stuffed turkey cutlets warm with the pan sauce drizzled on top. Enjoy!
