Ingredients

  • 8 pieces Flour tortillas
  • 1 lb Ground beef (or ground turkey for a leaner option)
  • 1 cup Black beans, drained and rinsed
  • 1.5 cups Shredded cheddar cheese
  • 1 cup Salsa
  • 1 cup Chopped bell peppers (any color)
  • 0.5 cup Chopped onion
  • 1 tbsp Olive oil
  • 1 tsp Ground cumin
  • 0.5 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Chopped fresh cilantro (optional)
  • 0.5 cup Sour cream or Greek yogurt (optional, for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Add the chopped onion and bell peppers to the skillet. Sauté for 3-4 minutes until softened.

Step 3

Add the ground beef (or turkey) to the skillet. Cook for 5-7 minutes, breaking it apart with a spoon, until browned and fully cooked.

Step 4

Stir in the black beans, salsa, ground cumin, chili powder, salt, and black pepper. Cook for another 2-3 minutes until everything is heated through.

Step 5

Remove the skillet from heat and stir in 1 cup of shredded cheddar cheese. Mix until the cheese is melted and combined.

Step 6

Lay a tortilla flat on a clean surface. Spoon 2-3 tablespoons of the filling into the center of the tortilla.

Step 7

Fold the sides of the tortilla inward, then roll it up from the bottom, creating a secure wrap. Repeat with the remaining tortillas and filling.

Step 8

Preheat a large non-stick skillet or griddle over medium heat (no oil needed). Place the stuffed tortillas seam-side down and cook for 2 minutes on each side until golden and slightly crispy.

Step 9

Remove the tortillas from the skillet and cut in half if desired. Sprinkle with chopped fresh cilantro for added flavor.

Step 10

Serve warm with sour cream or Greek yogurt on the side for dipping.
