Ingredients

  • 4 pieces (6-8 oz each) Beef steak (sirloin or filet mignon)
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Shallots (finely minced)
  • 2 cloves Garlic (minced)
  • 1 cup Cremini or button mushrooms (thinly sliced)
  • 1 cup Cognac or brandy
  • 1 cup Beef stock
  • 1 teaspoon Dijon mustard
  • 1 cup Heavy cream
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Season both sides of the steaks with salt and ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil and 2 tablespoons of butter. Once the butter is melted and foaming, place the steaks in the skillet.

Step 3

Cook the steaks for 3-4 minutes on each side for medium-rare or adjust the time to your preferred doneness. Transfer the steaks to a plate and cover loosely with foil to rest.

Step 4

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Stir in the minced shallots and garlic, cooking until fragrant, about 1 minute.
