Ingredients

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 large russet potatoes, peeled and cut into chunks
  • 14.5 oz canned diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 0.5 tsp ground cinnamon
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp salt (or to taste)
  • 0.5 tsp black pepper (or to taste)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the pork cubes with salt and black pepper, then add them to the hot pot. Brown the pork on all sides, about 5-7 minutes. Remove the pork and set aside.

Step 3

In the same pot, lower the heat to medium and add the diced onion. Sauté until softened and translucent, about 5 minutes.

Step 4

Add the minced garlic, ground cumin, paprika, cinnamon, and oregano. Stir to combine and sauté for 1 more minute until fragrant.

Step 5

Return the browned pork to the pot along with the carrots, potatoes, canned diced tomatoes (with their juices), and chicken or vegetable broth.

Step 6

Add the bay leaf, then season with additional salt and black pepper to taste.

Step 7

Bring the stew to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 1 to 1.5 hours, stirring occasionally. Cook until the pork is tender and the vegetables are soft.

Step 8

Remove the bay leaf and taste. Adjust seasoning if needed.

Step 9

Serve the stew hot, garnished with fresh parsley if desired. Enjoy with crusty bread or over rice for a complete meal.
