Ingredients

  • 6 large eggs
  • 0.25 cup heavy cream

  • 0.5 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons fresh chives, chopped (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until combined. Set aside.

Heat the olive oil and butter in an 8- or 10-inch non-stick skillet over medium heat.

Add the chopped onion to the skillet and sauté until softened and translucent, about 3-4 minutes.
