Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked elbow macaroni
  • 14.5 ounces canned diced tomatoes (with juices)
  • 8 ounces tomato sauce
  • 2 cups chicken or beef broth
  • 1.5 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion and cook for 3-4 minutes until softened.

Step 3

Add the minced garlic and cook for 30 seconds until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon. Drain any excess grease if needed.

Step 5

Stir in the uncooked macaroni, canned diced tomatoes (with juices), tomato sauce, and chicken or beef broth.

Step 6

Season with dried Italian seasoning, salt, and black pepper. Stir everything to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 12-15 minutes, stirring occasionally, until the macaroni is tender and has absorbed most of the liquid.

Step 8

Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet and let it sit for 2-3 minutes until the cheese is melted.

Step 9

Garnish with chopped parsley if desired and serve hot. Enjoy!
